Srirachi + Honey Glazed Chicken Thighs

Srirachi and honey, my two favorite ingredients. Like pb and jelly, they just go so well together. I usually use the two on wings, but this time I slathered them on some chicken thighs and baked them in the oven. The end result, juicy thighs…yum and simple!

Rinse and pat the chicken thighs until dry. Make sure you soak up as much water as possible to ensure a crisp golden skin on the chicken. Season both sides with s+p and bake skin side up the oven for 15 minutes.

Meanwhile, make the glaze. Mix together equal parts Srirachi and honey, and a few teaspoons of soy sauce and ground ginger. Always remember to taste the sauce! Add more honey if it is too spicy or more Srirachi if you want that extra kick of spice.

By now, the chicken should be done and you can remove from the oven.

Generously coat the chicken thighs in the glaze…reserve some for a second coating at a later time (optional step)

Bake for another 15 minutes. Take out of oven and add a second coating of the sauce. Return to oven and bake for another 15 minutes or until the skin is crisp and a bit charred. You can also test when it’s done when the juices run clear when poked into with a knife.

I served this with a garlic and ginger infused jasmine rice. Perfect, quick, and easy!

Srirachi + Honey Glazed Chicken Thighs

Chicken thighs
1 cup honey
1 cup Srirachi
3 teaspoons soy sauce
3 teaspoons ground ginger

Preheat oven to 425 degrees. Place chicken thighs skin side up and bake for 15 minutes.

In a bowl, combine the honey, Srirachi, soy sauce, and ground ginger.

Generously coat the chicken thighs with the sauce. Bake in the oven for another 15-20 minutes or until the skin is crisp and charred.

Remove from oven and let rest for 7 minutes before serving.

Surprise!!! What We Did for Valentine’s

Surprise!! The mister and I celebrated Valentine’s Day early! A whole week earlier! Actually, I think he had it all planned out, and I just kept shouting “Surprise! Happy early Valentine’s Day!” at every perfect moment :)

We started off the day doing our usual: morning snuggles, me glued to my iPad pinning every cute picture of a dachshund puppy I can find, and him skimming his morning paper/reading his computer programming books (I love my hunky nerd!).

We were doing errands and he surprised me by taking me to our local Sunday farmer’s market in Claremont so I can pick out my favorite tulips :)

I must be growing up because instead of picking out tulips, I asked for an herb plant. We settled on a beautiful rosemary plant. I love it! It’s so fragrant and just perfect!! It was the most present ever!

We stumbled upon a nearby cheese store and went to Trader Joe’s to pick out an assortment of cheeses, meats, bread, and of course, wine!

And we spent the night cooking dinner together. Meats are his thing, so handled that. And I tried a new pasta recipe and roasted some asparagus in the oven.

Aside from staying in and cooking, we also got the chance to take a stroll outside, shop, and eat at Toby Keith’s!!

One of my favorite finds at Urban Outfitters! I want this teapot!!

For a late lunch, we went to Toby Keith’s! There is just something about this place that keeps me wanting to come back…

Maybe it’s the deep fried pickles! I love me my pickles!!

Our mahi mahi was served with a side of rice…in a bag…. Sigh, another place that serves microwaved food. I was crushed :(

Cooking Adventures :: Flames

Hi guys!!

I just wanted to pop in quickly and say hi. We had a wonderful weekend eating yummy food, exploring our local Sunday farmer’s market, and spent the night cooking dinner together. He did a flambé!! It was amazing watching that huge burst of flames! He was very proud of himself and I’m very proud of him hehe.

Weekend || Ramen, Date Night In, Summer Concerts

I know, I know, I know, it’s only Tuesday…but I’m already planning and patiently waiting for the weekend. It came and went by too quickly.

I am the world’s biggest klutz and took a tumble, fell on my knee and scraped it. I wailed and kicked and screamed like a baby when my boyfriend tried cleaning the wound :(

He took me out for noodles at our favorite ramen house! I love that we found a spot closer to us and don’t have to drive out to Little Tokyo for noods!

Every time we come here, I always try something new. This time I tried the shin shin ramen (spicy seafood ramen). I had an epic ramen fail and couldn’t finish my bowl! I’m usually the first to finish!!!

And I always get a Calpico! I grew up drinking this stuff and love it as much as I did when I was a kid. Oh, and of course a beer! Ice cold beer and a bowl of hot noodles, perfection! The mister is convinced that the Frost flavor Gatorade tastes like Calpico…we bought Gatorade later that day and I don’t think it taste like it at all!

The rest of the day was reserved for napping on him and him trapped from me napping on him :)

Just like last weekend, we spent Sunday indoors and only ventured out to pick up groceries and search for stray puppies (hehe, I have puppy fever!)

For dinner, we roasted some chicken leg quarters in a Sriracha + honey glaze and paired it with a garlic and ginger infused rice.

We ate and watched the worse movie ever made…. If you have an hour and a half to spare, check out “Sharknado” on Netflix. Apparently, this movie has a cult following…. It is just horrible….terrible effects, D-list actors, predictable, and full of “what where they thinking” moments. It was worth the laugh though!

I know this is months and months away, but I am sooooooo looking forward to the One Republic & The Script concert at the Hollywood Bowl in June! It’ll be the weekend before my birthday!!! The last time we went to the Hollywood Bowl was also around that time, and I love the feeling of outdoor summer concert nights! Counting Stars has been on repeat for weeks now!

Just a couple more days till the weekend!

Almond Chia Seed Pudding

Have you jumped onto the chia seed bandwagon yet? I am hooked. I’ve been incorporating chia seeds into my diet and have been religiously drinking one bottle of chia seed water (or green smoothie) a day.

Chia seeds are a superfood and provide calcium, fiber, protein, and antioxidants. I also read that it is great for workouts because they keep hydrated. As for weight loss, I really see no results…although my have munching consumption at work has been cut down to zero…I just eat a banana or an apple as a snack prior to lunch, then lunch (my work lunches are also very healthy, either salad or more fruit) and end the day with dinner at home. I think small lifestyle changes like that will lead to weight loss and an overall heathy lifestyle.

Aside from adding chia seeds to drinks, I like to make chia seed pudding. It’s great! Very easy and can be made overnight and can last up to five days if you choose to make large batches.

To make this, you’ll need chia seeds, almond milk (coconut milk with be great too!), vanilla extract, and a natural sweetener like maple syrup, agave nectar, or honey.

Combine 2 cups of almond milk, 1/2 cup of chia seeds, 1 teaspoon or vanilla extract, 3 tablespoons of maple syrup in a bowl and stir, stir, stir!!

Really stir, stir, stir!!!! Don’t stop till it has thicken in texture.

Once it is thick enough, store in the fridge for at least half an hour or overnight.
